Spencer Christian's Rum Balls (yeah, I giggled too)

A family favorite for the holidays from Good Morning America's former Weathercaster.

Ingredients

2 tbsps. cocoa
1 c. powdered sugar
1/4 c. rum
2 tbsps. light corn syrup
2 1/2 c. vanilla wafers, crushed
1 c. chopped pecans
powdered sugar

Sift together cocoa and powdered sugar. Combine and stir rum with light corn syrup. Add and mix vanilla wafers and chopped pecans. Roll ingredients together into balls. Dip each ball into powdered sugar, or put them in a plastic bag and shake them in the sugar.

Makes 25 rum balls.

First off I recommend reading the recipe carefully and not accidentally tripling the amount of rum you put in the cookies. Not that my cookies turned out bad, they just have a "bite" to them and I wouldn't recommend eating more than five or you could end up naked lip syncing to Mariah Carey's Christmas album in your living room. Not that I would know. If you aren't lucky enough to own a cuisine art I suggest the giant zip lock bag and bottle of wine method of smashing, crushing and pulverizing the nilla wafers. Do not open the bottle of wine when you're done and start drinking. Or else you could find yourself saying "mistletoe schmitzletoe, let's do it on the tree." Not that I would know.~pulls pine needles out of hair~

My head hurts today.

My team is having a holiday potluck this afternoon so we can all bond during this festive time of year. (No, I did not bring any rum balls, though I did consider it this morning as I warily eyeballed them in the refridgerator). I took the easy way out and offered to bring chips and salsa. It's cheap, easy and even pleases the vegan on our team. We're stealing a TV & VCR cart so we can watch movies. I brought in my "Merry Mishaps of Mr. Bean" video. This pretty much means the day is a complete waste. At least I'll be well fed and slightly amused.
